Make sure that pavlovas are securely wrapped and then covered for extra protection.
Keep Dry
Moisture is an enemy of meringues. Take care to store them in a dry place, away from any source of humidity. Throw in some desiccant packets as added protection. from
Wait to Fill
To prevent the pavlovas weeping or becoming too soft, assemble a couple of hours or so before serving. Much earlier than that and you potentially run the risk of the sugar in the pavlovas, berries and whipped cream reducing that glorious dessert a soggy mess.
