Our best-selling items include our cinnamon roll, cardamom bun, lingonberry almond cake and our Princess cake.

Production Tip

All of our products are handmade, so there is a level of detail and attention needed that takes time to master. We don’t look for shortcuts, but rather we focus on getting really good at what we do, which helps our efficiency in the shop. Having a dedicated and talented team has been key to the overall success of what we do.

Equipment ‘Must-Haves’

One of the most useful pieces of equipment for the shop has been a proofer-retarder. It saves hours each morning, allowing us to arrive a little later to start baking and focus energy on producing great product.

Secret of Success

Focusing on quality and craftmanship was the main driver for the bakery. The design of the shop allows our customers to see a glimpse of what the bakers do on a daily basis and appreciate the handmade nature of the items. We also chose to stone-mill all of our flour from local organic grain, which is on display for customers and reinforces our commitment to quality ingredients.

Future Goals

As we approach our fourth year in business, the need for production space has become a necessity. Looking back, I wish I would have taken on a bit more space for the shop, but we’re looking forward to having another shop/space where we can create new items and continue to supply our other two shops.
