Floriole Cafe and Bakery is owned by Sandra Holl and Mathieu Holl. They specialize in French pastries using fresh, local ingredients and was named Chicago’s Best Bakery.
Company Mission
Floriole strives to be a business that is good for the earth and the community. We do this by finding delicious ways to reduce food waste, recycling, composting and sourcing ingredients from local sustainable farms. We give back to the community by creating good jobs with fair wages, flexible schedules and paid sick leave, a safe work space with opportunities to grow and learn.
Signature Product
There are so many! We are known for our laminated pastries – croissant, almond croissant, etc. Everyone loves our canele de Bordeaux, too. On the savory side, I would nominate our Parisian sandwich – baguette, butter, mustard, ham and gruyere. So simple and delicious.
Secret of Success
We never compromise on quality. If something is not right, we don’t sell it. I would rather pull product for the day than sell sub-par pastry.

Our shop has great light. If you sit in the front window area, it feels like you are outside.
