A New Chapter of Creativity and Collaboration
L’École Valrhona Brooklyn, the benchmark for pastry and chocolate education, is proud to unveil its 2026 class calendar, a year shaped by creativity, collaboration, flexibility, and a deep commitment to listening to our community.
Building on over a decade of expertise and connection in Brooklyn, the new calendar introduces a dynamic mix of formats: immersive two and three-day classes and accessible one-day classes designed to meet the evolving schedules and needs of today’s pastry professionals.
This year also introduces class difficulty levels: Beginner, Intermediate, and Advanced, to help chefs find the perfect fit for their experience and goals.
“Our mission has always been to empower chefs to push their craft further while fostering genuine connections,” says Luke Frost, Executive Pastry Chef of L’École Valrhona North America. “In 2026, we’re keeping the same spirit of excellence, but with even more flexibility, creativity, and collaboration.”

Highlights of the 2026 Program
2026 calendar presents a dynamic lineup of classes taught by leading pastry chefs and chocolatiers from around the world. Highlights include
- Mastering Pastry & Viennoiserie (March 10–12) with François Daubinet
- Italian Gelato & Frozen Desserts (March 16-18) with Franco Ascari and Valrhona Executive Pastry Chef Luke Frost
- Artistic Chocolate Showpieces (June 2–4) with MOF, Stéphane Tréand
- One Shot (September 1-3) with Romain Grzelczyk and Valrhona Pastry Chef Mario Bacherini
In addition to these classes, chefs can explore a variety of focused one- and two-day sessions throughout the year, delving into emerging trends, innovative techniques, and seasonal inspirations.

An Intimate Learning Experience
Each class is intentionally designed to be personal and immersive, with small groups that foster authentic exchanges between chefs.
